Mmm, mmm, polenta

Melissa\'s polentaI realize that polenta is the easiest thing in the world to make, but I came across Melissa’s organic polenta in my regular grocery store, and just had to give it a try.

It comes in different flavors (I’ve tried the sundried tomato and the Italian herb), though the flavor isn’t that strong. There’s actually some liquid in the tube, so if you try it, open the package over the sink!

Sometimes I just make this simple, by putting a little pesto (either traditional or sundried tomato) and a little cheese on top of polenta slices and then nuking them. Last night, I sauteed up some crimini mushrooms (baby portabellas), spinach, shallot, and grape tomatoes and put that over top the polenta. And of course, there’s the traditional way of serving it, which is a nice marinara or other tomato sauce.

Yummm!

    based on your referral of the book here on your site, I got The Diet Myth and have started reading it. It is really, really liberating! I couldn’t help myself, and read the end after reading just the first two chapters (that is, I skipped to where he talks about his weight loss). It does suggest a somewhat mixed message but I am leaving trying to reconcile that for another day. For today, I am breathing a bit easier, and forgetting about ideas of food as the enemy, units to be measured and counted, etc. NOT going crazy by any means, just trying to get away from the OCD behavior that tends to surround food when you’ve dieted. And it feels GREAT! thanks for the recommendation!

    Wendy, that’s great! That’s how I got started on this path…I just wanted some peace of mind. So my plan is to see where I get to just by stopping the overeating and eating nutritious foods most of the time, and then go from there. But the answer sure isn’t going to be another diet!

    Susan, in my store it’s located in the produce section near the bagged lettuce and cabbage, which is also where the refrigerated soy stuff (like meatless burgers) is.
