Blueberry Ice

Here’s another quick recipe inspired by SuperFoods Rx, which notes that blueberries are one of the “three major SuperFoods” that should be eaten “most days” since “the blueberry combines more powerful disease-fighting antioxidants than any other fruit or vegetable.”

I often put blueberries on oatmeal or yogurt, but last night, I was thinking of having some blueberries as a before-bed snack, yet thought there had to be something more interesting than just thawed blueberries. The recipe below was trivial and incredibly good, and has lots of other potential!

Blueberry Ice

1/2 c frozen blueberries
juice to cover

Blend with an immersion blender until smooth, about 10 seconds. Eat and enjoy!

I used Kagome’s Purple Fruits and Roots as the juice, which meant that this snack was probably the healthiest thing I ate all day :). Add a bit more juice, and you could make it a smoothie instead, or freeze this for 15 or 20 minutes and have something more like a sorbet.
